Saz Arrack!

Saz Arrack is my arrack inspired take on the the classic sazerac cocktail. Arrack, a coconut based spirit from Sri Lanka works perfectly here with a dash of agave syrup – which enhances the smokiness of the alcohol and adds a dash of sweetness (use simple sugar syrup if you can’t find agave). Don’t forget that final splash of absinthe that gives this drink its complexity. The perfect cocktail for a chilly winter night – or as a post prandial on the beach!


50ml arrack

5ml agave syrup

3 dashes Peychaud’s bitters

Absinthe rinse

Orange peel



Stir the first three ingredients with ice.  Strain into a coupe or martini glass that has been rinsed with absinthe.  Squeeze the orange peel shiny side down to release the oils.  Enjoy!
